Add the rice and cook for 1-2 minutes, then add the stock and parsley and bring this mixture to a boil. Season to taste with salt and black pepper. Reduce the heat and cook, covered, for 12-15 minutes. 3. Add the chicken. Lay the cooked chicken breast on top of the rice in the pot.
Instructions. In a large pan with high sides, add the 1 tablespoon of olive oil for the chicken, and sear the chicken for 3-4 minutes on each side on high heat, until golden brown. Cover in a foil wrapped lid, set the heat to low, then let steam for 10 minutes. 8. After 10 minutes, open and fluff the rice with a fork.
Pour in your chicken stock, beer, salt, and saxon packets. Add your chicken back to the pot including any juices. Bring to a full rolling boil for 2 minutes. Reduce heat to low and cover pot with foil and then the lid and simmer for 25 minutes. After the 25 minutes, add in the peas, cover again and cook for 5 minutes.
